Soft Chewy Ginger Cookie Recipe

  • 2 1/4 CUPS ALL PURPOSE FLOUR
  • 2 1/2 TSP BAKING SODA
  • 3/4 TSP SALT
  • 1 TBSP GROUND GINGER 
  • 1 1/2 TSP CINNAMON
  • 1 TSP GROUND CLOVES
  • 3/4 CUP UNSALTED BUTTER @ ROOM TEMP
  • 1 CUP BROWN SUGAR
  • 1 EGG
  • 1/4 CUP FANCY MOLASSES
  • + 1/2 CUP OF GRANULATED SUGAR FOR COATING THE COOKIES

  • IN A BOWL, WHISK TOGETHER THE FLOUR, BAKING SODA, SALT, GINGER, CINNAMON AND CLOVES. SET ASIDE
  • IN A MIXER, CREAM THE BUTTER, BROWN SUGAR TILL LIGHT + FLUFFY. 
    NEXT, ADD EGG AND MIX TIL COMBINED.  THEN ADD MOLASSES AND MIX TIL INCORPORATED.
  • SLOWLY ADD DRY INGREDIENTS TO BUTTER MIXTURE AND MIX ON LOW SPEED TILL COMBINED.
  • COVER BOWL WITH PLASTIC WRAP AND CHILL FOR AN HOUR
  • PREHEAT OVEN TO 350°F + LINE 2 BAKING SHEETS W PARCHMENT PAPER
  • ROLL BALL OF DOUGH TO 1 INCH BALLS
  • THEN ROLL BALLS IN THE EXTRA GRANULATED SUGAR TILL COMPLETELY COATED.
  • PLACE BALLS ON BAKING SHEET EVENLY SPACED OUT
  • BAKE 15 - 20 MINUTES TIL COOKIES ARE FLATTENED AND DOUBLE IN SIZE
