Pecan Snowballs Recipe

  • 1 CUP UNSALTED BUTTER AT ROOM TEMP
  • 6 TBSP GRANULATED SUGAR
  • 2 TSP VANILLA EXTRACT
  • 1 CUP CRUSHED PECANS
  • 4 EGG YOLKS
  • 1 TSP WATER
  • 1 TSP FRESH LEMON JUICE
  • 1 CUP ALL PURPOSE FLOUR
  • 1/2 CUP ICING SUGAR FOR DUSTING AT THE END.

  • IN A MIXER, CREAM THE BUTTER.
  • ONCE BUTTER IS SMOOTH, ADD SUGAR + VANILLA
  • NOW ADD IN EGG YOLKS, THEN WATER FOLLOWED BY THE LEMON JUICE.
  • ADD FLOUR AND THEN INCORPORATE THE PECANS.
  • PUT DOUGH IN REFRIGERATOR FOR 30 MINUTES
  • PREHEAT OVEN TO 350°F
  • ROLL OUT DOUGH IN 1 INCH BALLS
  • TRANSFER BALLS TO PARCHMENT PAPER LINED BAKING SHEET AND BAKE FOR 15 MINUTES
  • REMOVE FROM OVEN AND LET COOL
  • GENEROUSLY DUST COOKIES WITH ICING SUGAR.
