- 6 TBSP GRANULATED SUGAR
- 2 TSP VANILLA EXTRACT
- 1 CUP CRUSHED PECANS
- 4 EGG YOLKS
- 1 TSP WATER
- 1 TSP FRESH LEMON JUICE
- 1 CUP ALL PURPOSE FLOUR
- 1/2 CUP ICING SUGAR FOR DUSTING AT THE END.
- IN A MIXER, CREAM THE BUTTER.
- ONCE BUTTER IS SMOOTH, ADD SUGAR + VANILLA
- NOW ADD IN EGG YOLKS, THEN WATER FOLLOWED BY THE LEMON JUICE.
- ADD FLOUR AND THEN INCORPORATE THE PECANS.
- PUT DOUGH IN REFRIGERATOR FOR 30 MINUTES
- PREHEAT OVEN TO 350°F
- ROLL OUT DOUGH IN 1 INCH BALLS
- TRANSFER BALLS TO PARCHMENT PAPER LINED BAKING SHEET AND BAKE FOR 15 MINUTES
- REMOVE FROM OVEN AND LET COOL
- GENEROUSLY DUST COOKIES WITH ICING SUGAR.
